Gingerbread men


Can the Christmas cookie baking be complete without the gingerbread men? If you run out of eggs, they can be veganized without any problems, while still tasting the same! 
They are my favourite biscuits all year round ;)



INGREDIENTS for 40 biscuits:
  • 2 tbsp grounded flaxseed (15g)
  • 200g flour
  • ½ baking powder (~7g)
  • 70g caster sugar
  • 2 tsp ginger
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ½ tsp clove
  • pinch of salt
  • 80g margarine, softened
  • 40ml maple syrup (or honey)
  • 90g icing sugar
  • 15ml plant milk

METHOD:
1. Mix all the dry ingredients, then add margarine and maple syrup.
2. Rub the ingredients until a dough forms.
3. Form a ball, wrap in cling film and chill for 20 minutes.
4. After 20 minutes, preheat your oven to 170C.
5. Roll out the dough to a thickness of 2-3mm and cut out your desired shapes.
6. Bake for 10-12 minutes, depending on the size. They should still be a little tender when you get them out of the oven. Leave them to cool down completely. 
7. While the biscuits are cooling down make the royal icing: mix well the icing sugar and milk to get a lump free, thick white paste. Transfer into a piping bag with a small nozzle (or use a freezing bag: after you fill it cut the angle).
8. Decorate the biscuits.
